Open Faced Pea, Avocado and Smoked Salmon Sandwich

Spring finally reared its much anticipated head with a full day of sunshine today, and I doubt anyone is complaining. It has been a very looooonnnngg and grey winter so I definitely got my fix of vitamin D today. Not only was I craving a change in weather, but I was needing a change in my meal plans. There is only so much soup and stews you can eat over the course of winter. I am ready for fresh foods, fresh produce and quick meal ideas that allow us more time outside and less time in the kitchen. This recipe is unlike any sandwich I’ve tried and it is so satisfying. It is packed with lean protein, healthy fats and flavor. I forgot the pea shoots in these pictures so I threw on fresh cilantro instead. Either way it is a great dinner, lunch idea or snack. Ingredients

  • 2 cups frozen peas, thawed
  • 1 avocado, chopped
  • 125 g cream cheese,
  • 2 tbsp lemon zest
  • 1 tbsp lemon juice
  • dark rye bread
  • 300 grams smoked salmon
  • 1/4 cup pea shoots
  • 2 radishes, sliced
  • 1 tbsp chopped dill weed
  • 4 lemon wedges

 

Directions:

  1.  Blend peas with avocado, cream cheese, lemon zest and lemon juice in a food processor until combined.
  2. Spread 1/4 cup pea mixture over each bread slice. Top with smoked salmon slices, radishes and pea shoots. Sprinkle with dill. Season with fresh pepper. Squeeze a lemon wedge over each sandwich before serving.

Easy Orange Chicken

Hey everyone!! Lets just start by saying that spring is in the air and I am loving every minute. So far this year has been filled with tons of fun. It was my hubby’s birthday in January, I went on a child-free girls weekend to Calgary in February to take in an NHL game, shopping and great company and in only a few short months of 2015 we have enjoyed some great date nights, weekends away and also memorable time as a family. I am getting so excited for this summer to enjoy camping, swimming, beach days and the Okanagan at it’s best! But until then I am sneaking in as much sunshine and fresh air as I can. However, once the sun goes down (which is getting later and later…. yippee) it is still pretty darn chilly so I am indulging in my comfort food recipes for a few more weeks. This recipe is a great combination of sweet and savory and without the traditional deep frying of the chicken, this recipe is only a fraction of the fat and calories. It is super quick and easy to make so it’s ideal  for those nights when the Chinese take out menu seems to be calling your name. Enjoy!
