When the weather gets hotter I find myself craving ice cream sandwiches and margaritas lighter dinner ideas. Unfortunately there are only so many ways you can eat salads before realizing that it’s the same dish… different leaves. And even though you may not want heavy comfort food, you also don’t want to be left hungry a few hours after dinner.
 I absolutely love Asian inspired dishes so this recipe does not disappoint. Who doesn’t love spaghetti and meatballs? But even that can get boring. These Asian turkey meatballs with lime dressing are the perfect twist on traditional beef meatballs and tomato sauce. The fresh ingredients and leaner protein are a great summer meal that leave you feeling full without feeling fat. Serve them over a bed of rice or even over greens if you are really determined to stick to yours salads. Either way you will love em!

Quick and Easy Unstuffed Cabbage Rolls

I occasionally have days when I’m feeling quite domesticated and the idea of hand making perogies or cabbage rolls crosses my mind. Then I remember that fact that I don’t have six hours of extra time just kicking around and I’m not a Polish Iron Chef, so I browse for the next recipe. Spicy Coconut Vegetarian Rotini

 

IMG_0012Hello July! How nice of you to greet us with 39 degree weather and smoky forest fire air, but none the less here you are! We have been having extremely higher than normal weather for the past two months so it’s hard to believe that summer is just starting! So the other day when it was a cool 28 degrees out I decided to try to this recipe. I was craving something full of flavor and full of nutrients. Enter in my love for pasta! It is simply something that I have never attempted to eliminate from my life, instead I have just opted for healthier ingredients and gluten free noodles. Although this recipe is meant to be vegetarian, I added some cooked chicken last minute which is completely optional. And don’t be scared of the spice, it is very mild, unlike the July temperatures outside my kitchen door. Happy cooking!

Waldorf Chicken Sandwiches

This weekend was ridiculously hot! We reached highs of 39 degrees all weekend!! Although we live near a beautiful lake with endless beaches, there is only so much sun and heat you can take in two days, and this is coming from a heat lover. I spent the majority of my mornings dipping in our kiddie pool and lounging beside the mister and the afternoons were spent fully submerged in the cool lake to elude the scorching rays at the peek of the heat. But after a long day under the sun, it’s hard to have much of an appetite, much less an appetite for anything warm or heavy. And since I can’t live off watermelon alone, I decided to try this waldorf chicken salad recipe. I am not much of a chicken salad fan but this recipe was delicious! With nutty toasted pine nuts tossed in a tangy dressing with fresh ingredients, it was a perfect summer night dinner. So if you are feeling worn out by Mother Nature and need a light refreshing dinner that replenishes all the nutrients you sweat out, this is the one to try! Enjoy!

Chickpea Falafels

Okay this heat is getting crazy!! It’s only the first week in June and it’s already 33 degrees! There is only so much you can do outside without feeling like a human slice of bacon frying in the sun. So I like to take my little guy to the park or the farmers markets early in the morning before it gets too hot. Last summer I was strolling through the local farmers market and I came across a booth with authentic middle eastern products. Tabbouleh, hummus, mutabbal, falafels, and kabebs were calling my name, but as soon as I saw the falafels I knew I had to pick some up. Of course they were absolutely amazing so the other week when I was craving them I decided to make my own. Since the main ingredient is chickpeas, they are very inexpensive to make and I love how dense and flavorful they are. I make mine and serve them over salads, in wraps, served with breakfast or simply just dipped in homemade tzatziki. I chose to oven bake mine but authentically they are deep-fried so it’s all in your preference. Continue reading


Easy Orange Chicken

Hey everyone!! Lets just start by saying that spring is in the air and I am loving every minute. So far this year has been filled with tons of fun. It was my hubby’s birthday in January, I went on a child-free girls weekend to Calgary in February to take in an NHL game, shopping and great company and in only a few short months of 2015 we have enjoyed some great date nights, weekends away and also memorable time as a family. I am getting so excited for this summer to enjoy camping, swimming, beach days and the Okanagan at it’s best! But until then I am sneaking in as much sunshine and fresh air as I can. However, once the sun goes down (which is getting later and later…. yippee) it is still pretty darn chilly so I am indulging in my comfort food recipes for a few more weeks. This recipe is a great combination of sweet and savory and without the traditional deep frying of the chicken, this recipe is only a fraction of the fat and calories. It is super quick and easy to make so it’s ideal  for those nights when the Chinese take out menu seems to be calling your name. Enjoy!

Sweet and Sour Pork

This week has been a bit of a blur, because no matter how much I sleep I get I feel like my eyelids are fighting against me in the morning to open. My energy has been low so aside from trying to curb my daytime narcolepsy, I’m definitely feeling less than enthusiastic lately about cooking. But I found some great recipes so I’m hoping that will put a little pep in my step. I despise am not a big fan of cooked pineapple, so this was a bit of a stretch for me but turns out I absolutely loved it! It’s the perfect mix of spicy, sweet, tangy and fresh. The creole seasoning is great, and since this recipe only uses a portion of the seasoning you will have plenty leftover. I love using it to season oven fries or roasted potatoes. Mexican Bean Salad

Happy Family Day to all of my B.C readers! We just got back from a very wet and drizzly walk by the lake this morning, but with rain coats, hot tea and rain boots we were quite prepared.  He is now fast asleep and I thought I would share this great recipe. With the weather starting to feel more like spring than winter, I am already excited for lighter dinner ideas as opposed to heavy comfort food. This bean salad is fresh, flavorful and full of great ingredients! Beans are nutritional powerhouses packed with protein, fiber, B vitamins, iron, potassium, and are also low in fat, so I incorporate them into our diet on a regular basis for these reasons.
