Genoa Salami Salad with Spicy Hummus Dressing

Okay seriously this is my favourite salad to make, definitely in my top five recipes. I find that I only like salads if they eat more like a meal and less like rabbit food so I like to pack my salads with all sorts of goodies. The dressing for this salad is amazing! In all honesty I could eat it by the spoonful…. which sometimes I do because come on…. it’s just mostly yogurt and chick peas. Most dressings are what turn a salad from fresh to fattening so when I tried this dressing I was stoked. Not only is it guilt-free so I can literally drown my salad in it, but it’s creamy and full of flavor. It is my go-to salad in the summer when I’m craving something tangy and spicy! I also love the addition of a good quality cured meat when I get sick of chicken as the main meat source in my summer dishes. I like this salad even spicier so I usually grab a spicy genoa salami at my local Italian market too. Enjoy!

Quick and Easy Unstuffed Cabbage Rolls

I occasionally have days when I’m feeling quite domesticated and the idea of hand making perogies or cabbage rolls crosses my mind. Then I remember that fact that I don’t have six hours of extra time just kicking around and I’m not a Polish Iron Chef, so I browse for the next recipe. But once I realized that if I simply deconstructed (aka…. lazy man cooking) the cabbage rolls, I could make them in a fraction of the time, without skimping on any of the flavor. If you’re looking for a mouthwatering sandwich worthy of it’s place on a pub menu, look no further. This is my favorite steak sandwich recipe and considering that I am not much of a big meat eater, that says a lot in itself. This recipe is quick and easy but the end result is nothing short of delicious. Although the ingredients don’t sell themselves to be that exciting, whose to say that complicated equals great. Peanut butter and jam sandwiches never needed any fancy ingredients to be amazing? DIY Whitewashed Fireplace

Our fireplace has always been an eyesore for me. Although it was built very well in it’s day, no matter how much I scrubbed it, it still looked dingy and outdated. Time and time again, I tossed up the idea of completely painting over it white, but I didn’t feel as though it was the right structure and design to look polished in a solid color. So I just left it. Then a few weeks ago after taking pictures of a piece of furniture I had whitewashed, the idea struck. I could definitely whitewash my fireplace, or at least die trying. I did a test strip underneath the hearth which quickly turned into a two hour project. I used a white stain that was left over from painting our fences but any white paint would work, as long as you dilute it with a little water.  Make sure to clean the fireplace before hand with soapy water and a scrub brush and let dry overnight.

Banana Coconut Greek Yogurt Muffins

With the cooler mornings creeping in and the smell of autumn rolling through the valley, my kitchen is starting to look more enticing than the sandy beaches. Baking time! This is by far my favorite banana muffin recipe!! Unlike most muffins, this recipe contains no oil, butter or flour! Regular sugar is also not found in this recipe as coconut sugar takes its place. Coconut sugar is a much healthier option as it contains Iron, Zinc, Calcium and Potassium along with some short chain fatty acids, polyphenols and antioxidants. Not to mention that it has a lower glycemic index compared to table sugar. The greek yogurt also makes these tasty treats moist and tangy while adding extra protein. So who would say no to these muffins?! No guilt, no problem. But you’d never be able to tell that these are good for you judging by how delicious they are. Need I say more?! Continue reading
