Homemade Caramel Corn

Hey everyone! Good thing I have several recipes and posts saved on my computer…. because I have no idea how I would have the time to bake or cook with lil’ Hunter keeping me so busy during the day! He is officially one month old today….. sniffle sniffle. Time is going by much too quickly for my liking. Speaking of time passing…. it’s hard to imagine that Halloween is right around the corner! So in the spirit (I’m so punny) of fall treats I thought it would be a good time to share this caramel corn recipe. It was my favorite childhood treat that my mom used to make me whenever I had a sleepover. And now it’s my favorite adult treat for movie nights with my hubby.

It’s quick and easy to make…. well… as long as you follow the directions. Have you ever heard of Pintrosity?! Well here is my own baking embarrassment from last fall when I decided to make caramel corn and clean my house at the same time. Apparently my multitasking wasn’t up to par, since I absent mindedly forgot I had the popcorn in the oven. Sadly to say, there were no survivors…..

Ingredients:

  • 3/4 cup butter or margarine
  • 1/2 cup corn syrup
  • 1 1/2 cups brown sugar
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp baking soda

Directions:

1. Bring butter, corn syrup, brown sugar and salt to a boil while stirring constantly. Turn heat to low and boil without stirring for 5 minutes.

2. Remove from heat. Mix in vanilla and baking soda and pour over popcorn. (large mixing bowl. About 10 cups) Mix well.

3. Bake on a greased cookie sheet for 45 minutes at 250 degrees (stirring occasionally) Remove from oven and spread on foil that has been sprayed with cooking spray. Cool and break apart.

Every once in a while, someone will mail me a single popcorn kernel that didn’t pop. I’ll get out a fresh kernel, tape it to a piece of paper and mail it back to them. ~ Orville Redenbacher

  1. I just made this recipe, and it came out great! It’s always nice to find a treat that’s both delicious and super simple to make. After your incident, I was extra careful to keep track of the oven timer and not walk away for too long! Thanks for sharing!

    • I’m so glad you liked it. I am really picky for caramel corn because so many store bought types just taste like crystallized sugar was dumped in a bag. Either that or they are way to artificially sweet. Glad my recipe helped!
