Who doesn’t love waffles?! When I was a kid, I loved waking up to the fresh-baked smell of crispy waffles cooking in the kitchen on a weekend. How could I not jump out of bed for that?! Strawberries… whip cream….vanilla custard…. atop fluffy waffles. MMmmmmm. That’s a recipe for one happy belly. My mom used to make them as a treat with homemade sweet vanilla custard sauce. It’s creamy, sweet and the perfect sidekick to fresh berries.
- 1/4 cup sugar
- 3 Tbsp cornstarch
- 2 cups milk
- 1 tsp vanilla
Directions: In small pot over low heat add sugar, cornstarch and milk. Cook until thick. stirring consistently. Add vanilla. Do not boil.
Waffles (serves 8 waffles)
- 2 eggs
- 2 cups flour (you can use whole wheat, almond flour etc)
- 2 cups milk (you can use almond milk, coconut milk, or soy milk)
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/3 cup coconut oil
Directions: Place all ingredients in a blender until smooth and free of large lumps.
Most of the time when I make waffles I go without the custard and serve mine with greek yogurt and fruit. Waffles are the perfect breakfast but also great for a fast dinner, and if you use the blender it’s even quicker. I put all the ingredients in the blender, blend it up and pour the batter right into the waffle iron (which was my parent’s wedding present from the 80’s so although it’s quite the eye sore it makes the best waffles) Then as the waffles are cooking, I make some turkey bacon and cut up my fruit and within 15 minutes we have a great meal! I hope you like it! And if you have any leftover waffles wrap them up and pop them in the toaster the next day!
