Strawberry Chicken Salad with Poppyseed Dressing

For all my Canadian readers, I hope you had a great long weekend and for all my American readers, I hope you are getting ready for all the celebrations tomorrow! And for the rest of you…. well I hope you are enjoying your day wherever you are reading from.

The past few days have been HOT! It’s been close to 38 degrees (100 Fahrenheit) each day and humid too!  My hubby and I spent Sunday and Monday camping at the lake with great friends and it was amazing! Me and my girlfriend Lise floated around the lake, sat in the sun and were soooo excited when a neighbor offered us his kayaks. We took him up on his offer so my Canada day was spent paddling around the shores of a serene lake a midst the high mountains and lush forests. It was pure bliss! But now that I’m back home and enjoying the sun from my backyard….. it’s been me and Mr. Mister (an amazing contraption for the hose that sprays the most amazing mist of water) Mr. Mister has been my saving grace to staying cool with my growing belly.

So the hot weather is where my inspiration for this recipe comes from. The perfect summer salad when the last thing you want is to be cooking over an oven or eating a hot meal. So stock up on your fresh veggies and treat yourself to this refreshing salad!

Salad

  • 6 cups spinach
  • 1/2 large cucumber, diced
  • 2 cups cubed cooked chicken
  • 1 cup strawberries, diced
  • 1/2 cup sweet & spicy pecans

Poppy Seed Dressing

  • 1/4 cup white sugar
  • 1/4 cup white vinegar
  • 1 tsp salt
  • 1 tsp ground dry mustard
  • 1 tsp grated onion
  • 1/4 cup light mayo
  • 1/4 cup skim milk
  • 1 Tbsp poppy seeds
