Avocado & Feta Salad with Honey Lime Dressing

I decided that since the weather wasn’t going to smarten up then at least my food choices could. Just because it’s raining outside doesn’t mean I can’t be inspired by fresh summer ingredients right?! This is my new favorite salad!! As soon as I make anything with fresh avocado or cilantro I am instantly taken back to the memories of enjoying authentic Mexican food with my hubby in Mexico. Ohhhh to be back in Mexico, listening to the sound of the ocean…. enjoying a salty margarita and fresh-cut salsa. But for now…. the only sound of water I’m hearing is the rain and the only alcohol I’m consuming is whatever hairspray I accidentally spray into my face in the morning. *sigh*

Anyways…. aside from my favorite guacamole, this is my second runner up for Mexican recipes. As much as I love burritos and tacos, this salad is just as filling and definitely hits the spot. It’s refreshing and can be served with or without meat. I chose shrimp for a lean protein but with all the nutrients of the beans and avocado’s you won’t be sacrificing any flavor sans meat. Enjoy!!!

Ingredients

Salad

  • 1/2 head of iceberg lettuce
  • 1 yellow pepper, diced
  • 1 red pepper , diced
  • 1 can of beans, rinsed and drained (I used a 6 bean medley)
  • 1/2 cup light feta cheese
  • 2 ripe avocados, diced
  • 1 cup corn kernels

Honey-Lime Dressing

  • 1/4 cup fresh lime juice
  • 1/4 cup coconut oil
  • 2 tbsp honey
  • 2 tbsp finely chopped fresh cilantro
  • 1 garlic clove, peeled and minced
  • 1 tsp chopped jalapeno pepper (use canned for less heat)
  • 1 tsp Dijon mustard
