Healthy Egg Salad Sandwich

Happy Monday everyone! I hope you all had a relaxing weekend. For us it was another weekend full of house reno’s, yard work and early nights… well except for last night. Remember what I was saying earlier about being caffeine sensitive?! Well yesterday was the second time in my pregnancy that I’ve had caffeine… and neither times have been by choice. I ordered a supposed decaf coffee in the afternoon and at 2 in the morning I was still wide-eyed and bushy-tailed. (Decaf my butt) So needless to say…. I am running off very little energy now and in dire need of an early night. How I’m going to make it to the gym later… I have no idea. I’m just taking it one step at a time and the first being dinner. For those nights that I need a quick and easy dinner I turn to my beloved egg salad sandwich. Since I’ve given up runny eggs during pregnancy I’ve decided to substitute it with something equally as yummy. This is my favourite recipe and on a hot night nothing is better than a fresh sandwich. Hope you like it!

Ingredients:

  • 8 hardboiled eggs
  • 1/2 cup greek yogurt
  • 1-2 tsp Dijon mustard
  • 1/4 cup green onion
  • 2 tsp fresh dill
  • 1 tsp paprika
  • salt and pepper to taste

Directions:

1. Dice eggs and add remaining ingredients in medium bowl. Mix well. Serve on fresh bread with crispy lettuce. Enjoy!
