Healthy Lettuce Wraps

This is one of my favourite go-to dinner ideas! It’s a healthy, low carb dinner that is fast and easy to make during the hot summer months when you don’t want to be slaving over the oven. I often serve it as a salad too. And for those of you who love carbohydrates or need a heartier meal, add steamed rice and garnish with crispy chow mein noodles!

Ingredients

  • 1 head of butter leaf lettuce
  • 1 tablespoon cooking oil
  • 1 large onion, chopped
  • 2 cloves fresh garlic, minced
  • 1 pound extra lean gound meat (turkey, chicken, beef or pork)
  • 1 tablespoon low-sodium soy sauce
  • 1/4 cup hoisin sauce
  • 1 teaspoon ginger
  • 1 tbsp lime juice
  • 1 tablespoon rice wine vinegar
  • 1/4 tsp crushed red pepper flakes
  • 1 bunch green onions, chopped
  • 2 tsp sesame oil

Directions

1. In a large nonstick skillet over medium heat, saute the onions and garlic in oil. Add the meat and cook until brown.

2. Add soy sauce, hoisin sauce, ginger, lime juice, vinegar, red pepper flakes and stir. Stir in green onions, sesame oil and continue cooking until the onions just begin to wilt, about 2 minutes.

 3. Scoop mixture into lettuce leaves and garnish with a handful of bean sprouts, shredded carrot and crushed peanuts. Enjoy !!
